This is one of those 'let's make an episode that puts this character in the spotlight with his/her family and does almost nothing else'. I think they created this episode for the main purpose to develop upon Bon Bon and her family and not do much else. Any other thoughts?

I personally adored this episode, and not just because I happen to like Bon Bon and her family. There were some pretty funny moments from a side of Bon Bon that never really appeared in other episodes of the series, and that is the sarcastic side. Normally she's insecure and pretty earnest, buuuut she has a impish streak with that deadpan snark she exhibited here.
That said, your conjecture at the purpose of this episode is pretty accurate. It brings to light what I am calling the Bon Bon Triforce for this post. Exhibit one, a huge family. Exhibit two, a dream of being a model. Exhibit three, a love of eating anything in sight. It's a cycle, if you will. Everything is interconnected. Her family's size leads to her wanting attention, which being a model would necessitate. Part of the reason she eats so much could be explained by her insecurity, which comes in part by having busy family members; stress-food, if you will. Her love of eating might hinder her from her decided dream of being a model, leading to more angst. Her own insecurity pressures her to eat more, and overall you get a huge pile of angst that equals great angst for a My Little Pony angst story.
Of course, being this affected by all these factors is a bit strange, especially because her parents are very loving and her siblings and friends are very accepting. However, I have other ideas as to how this could have happened, and so could others if they so chose. I shan't self-promote.
PLUS, there's the adorable imagery of baby Bon Bon playing pots and pans fan. (It was her favorite game!) And other stuff. But mainly that.
